hi everyone! i have another installment of tuesday taste for you! i’m mostly vegetarian (flexitarian, as a friend pointed out to me!) in that i don’t eat a lot of red meat or fish. i’ve been meaning to be more intentional about eating healthy foods and after i picked up a can of black beans from trader joe’s a little while ago, i decided i would be a little adventurous and make black bean burgers!
here’s the process i went through:
1. mash beans
2. add an egg + crushed red peppers, lemon+black pepper, spinach, chopped red onions (in the future i’ll probably caramelize them– i didn’t realize it took 40 minutes!), a bit of cheese (i used mozzarella). preheat the oven to 375 degrees.
3. i saw that i had this cute mini bread in my kitchen and decided to make mini burgers to fit the bread, instead of regular sized burgers. next i lightly brushed the aluminum foil with olive oil, placed patties on the foil and lightly brushed the top of each patty with oil so that it didn’t stick when i flipped it over. =)
4. bake for about 7 minutes on each side, let them cool, and enjoy!!
